Summer is almost over. Where has the time gone?! For me, one of the best parts of summer is all the fresh fruit! I’ve been enjoying it as is all season long but, I’ve hardly done any baking with it. I love using fresh fruit in my baked goods so, why I haven’t been using it is beyond me! In an effort to redeem myself and the rest of the season, I decided to put together a peach crisp and savor the sweet taste of summer!
With lots of fresh juicy peaches and a crispy oat topping surrounded by subtle hints of cinnamon, vanilla, and nutmeg, every element of this dessert brings loads of flavor! While, cinnamon and nutmeg are common flavors of fall, autumn will be the last thing on your mind when you take a bite of this crisp. The peaches shine through and leave no doubt that summer is still here even if only for a short while. Top this crisp with ice cream for an extra special summer treat!
Peach Crisp
Yields 8 Servings
Ingredients
8 Fresh Peaches, Peeled, Pitted, and Sliced
1/2 Tablespoon Granulated Sugar
1 Teaspoon Vanilla
1 Teaspoon Ground Cinnamon, Divided
3/4 Cup Quick Oats
1/3 Cup Brown Sugar, Packed
1/4 Teaspoon Ground Nutmeg
1/2 Cup Butter, Cubed
Preheat oven to 350 degrees. Spray an 8 x 11 in. baking dish with cooking spray and set aside. Place sliced peaches, granulated sugar, 1/2 teaspoon cinnamon, and vanilla into baking dish and stir to combine. In a separate bowl, combine brown, sugar, 1/2 teaspoon cinnamon, nutmeg, and oats. Cut in butter until a crumbly mixture forms. Sprinkle the oat mixture evenly over the peaches. Bake for 45 minutes. Remove from oven and allow to cool before serving. Enjoy!

Ice cream is the best with a crisp…especially if you warm it up!!
