I’m going to tell you a secret.

…I use to not eat vegetables.
shh…I know, I know… what the heck!?
I promise, it wasn’t a conscious effort. It wasn’t that I didn’t like them or that I was allergic to vegetables or anything crazy. In fact, I love vegetables! Even as a kid, I loved them. I just stopped eating them when I moved out on my own. I didn’t cook (absurd right?!) and the only vegetable I was ordering from all the fast food I ate was a potato (french fried, of course). Really though, it is embarrassing how little I knew about nutrition and even more so, how little I cared.
After a sudden realization one day that the only vegetable I had, had in a week was the lettuce and tomato on top of my taco, I decided to change things. I made an effort to make sure I ate at least one vegetable a day (baby steps!) and to start cooking at home more. We still ate a ridiculous amount of fast food and it was quite a while before my veggie eating turned into an every day habit (more on this another day)but, I can assure you that I never went more than two days or so without vegetables again. Progress!
When I started eating veggies again, my favorite way to eat them was steamed (microwaveable steamer bags anyone?). I loved them! I thought they tasted great and the convenience couldn’t be beat! I loved them so much, that up until late last year, this was still my go to veggie source. And then, I learned a secret of my own…
Roasted vegetables are AMAZING!
Why this had been kept a secret from me for so long, I will never know but, I am making certain its not kept secret from any of you!

Ok. I think I made my point.
Nowadays, I always get in at least one serving of veggies a day (usually more) and I haven’t bought any of the frozen steamer variety in months. While I still enjoy steamed vegetables (I do it on the stove now), roasting is definitely my favorite way to prepare almost any vegetable.
Roasted broccoli tops my list of favorite vegetables to roast. Its so simple to prepare and comes out amazing every time. It goes well with almost any style cuisine and is elegant enough to be served at a formal dinner party but, easy enough that it can be served with a sandwich. I only wish someone had told me sooner!
Parmesan Garlic Roasted Broccoli
2 Heads Broccoli, Cut Into Florets
3 Cloves Garlic, Minced
1 Tablespoon Olive Oil
1/2 Teaspoon Kosher Salt
1/4 Teaspoon Ground Black Pepper
1/4 Cup Fresh Grated Parmesan Cheese
Preheat oven to 375 degrees. Place broccoli on a large baking sheet along with the garlic, olive oil, salt, and pepper and toss until all florets are evenly coated with the oil and spices. Bake for 40 minutes, tossing half way through baking. Remove from oven and toss the Parmesan Cheese with the broccoli. Return to oven for 2-3 minutes or until cheese has melted. Enjoy!
Note: This is also great with some fresh squeezed lemon juice. I add it depending on what I’m serving. If you decide to add it, just toss in 1-2 teaspoons of lemon juice along with the oil and spices and proceed as listed above.
