I bought some dark chocolate and peanut butter chips at the grocery store on Friday knowing that I needed some comfort food.You see, my life has been a bit stressful lately. Actually, that’s putting it very mildly. I won’t go into detail and bore you with specifics but, I can assure you, I’m in need of some serious comfort food to get me through everything that’s going on. That is where these cookies come in.
Chocolate and carbs are pretty much always my go to for comfort food.
I wish I found salad comforting but, I just don’t. Does anyone? I’d like to meet them.
Double Chocolate Peanut Butter Chip cookies are light years away from healthy, and are everything you could need to get you through a bad day! (Besides a magic fairy to grant you wishes and a bottle of wine…actually, I don’t drink but, I imagine it would help….I’m sure of it in fact!…unless your bad day is cause by drinking to begin with….moving on!) These cookies pack some serious comfort and the double chocolate is guaranteed to make you feel better.
RX: DOUBLE CHOCOLATE PEANUT BUTTER CHIP COOKIES
eat one to two cookies every 3-6 hours or until bad day is over or stomach ache begins
Yields 3-4 Dozen Cookies…I forgot to write it down. Oops =/
2 Cups All Purpose Flour
3/4 Cup Unsweetened Cocoa Powder
1 Teaspoon Baking Soda
1/4 Teaspoon Salt
1 Cup Butter
1 1/2 Cups Granulated Sugar
2 Large Eggs
1 1/2 Teaspoons Vanilla
1 Cup Dark Chocolate Chips
1 Cup Peanut Butter Chips
Preheat your oven to 350 degrees. Prepare cookie sheets by lining with parchment paper or a non stick mat and set aside. In a medium bowl, combine all dry ingredients and set aside. In the large bowl of an electric mixer, combine butter and sugar and beat on medium speed until light and fluffy. Add in eggs and vanilla and continue beating on medium speed. Once combined, slowly add the flour mixture to the butter mixture and continue beating on medium speed until thoroughly incorporated, making sure to scrape the bowl as you go. Once flour is completely mixed in, remove bowl from mixer and add in both kinds of chips. Stir chips in by hand until all chips are evenly distributed in the dough. Drop cookies by rounded tablespoons onto prepared cookie sheets and bake for 10 minutes on the center rack of your oven. Allow to cool and then, enjoy!
