I know that I have mentioned recently how stressed out I’ve been. Unfortunately, the situation I’m dealing with has only become more stressful. Because of this, I’ve been finding ways to make other aspects of my life a bit less hectic. This includes my time spent in the kitchen! Simple and easy meals have been my go to for the past couple of weeks and dishes like this Hamburger Helper Style Chili Cheese Pasta are a life saver when you just don’t have the brain power left to follow a long recipe or deal with complicated prep.
This version of Homemade Hamburger Helper is similar to the boxed variety but, is much healthier and more flavorful. There are no chemical additives, a lean turkey is used instead of beef and whole wheat pasta is used instead of traditional white flour pasta. Surprisingly, outside of making the seasoning packet, this dish requires virtually no more effort than the original boxed version and can easily be thrown together for a quick week night dinner or simple weekend lunch. If you are not a fan of the Chili Cheese Helper, Chickens in the Road has many other varieties you can try but, this adapted version is by far our families favorite!
Note: This version makes 8 serving as I like to have leftovers. It can easily be cut in half to suit your needs. To make this Hamburger Helper as easy as the original, you can make up several seasoning packets at a time and store in individual storage bags or containers. The homemade seasoning along with a box of noodles is also a great gift to take to someone in need of simple meals (sick, new baby, new house, etc.).
Hamburger Helper Style Chili Cheese Pasta
Adapted From Chickens In The Road
Yields 8 Servings
1 Pound Lean Ground Turkey
2 Tablespoons Cornstarch
1 1/2 Tablespoons Chili Powder
2 Teaspoons Garlic Powder
1 1/2 Teaspoons Paprika
1 Teaspoon Granulated Sugar
1 Teaspoon Table Salt
1/2 Teaspoon Ground Black Pepper
3 Cups Fat Free Milk
3 Cups Water
1 (13.25 Ounce) Box Whole Wheat Rotini or Elbow Pasta
In a large pot, brown ground turkey over medium high heat until cooked through. While turkey is browning, combine cornstarch, chili powder, garlic power, paprika, salt, sugar, and black pepper in a small dish or storage bag and set aside. Once turkey is finished browning, stir in milk, water, pasta, and seasoning blend and bring to a boil. Cover and reduce heat to medium. Cook for about 12-14 minutes or until pasta is tender. Stirring occasionally. Once pasta is fully cooked, add in cheese and stir until completely melted. Remove from heat, serve, and enjoy!
