Cheesy Baked Zucchini

Seriously, what is my problem?! It’s almost September and I have yet to post a zucchini recipe. Everyone knows that zucchini is a summer staple and here I sit, summer almost gone, without showing one of the top summer vegetables any love. *sigh* My apologies. Please forgive me! I promise to do better next year!

This simple zucchini recipe is one of my favorite summer side dishes.  It is so easy to prepare and goes great with anything you can throw on the grill. It’s amazing what just a bit of seasoning and some yummy cheddar cheese can do for a squash!  This recipe definitely tops my list of zucchini recipes for summer!

Cheesy Baked Zucchini

Yields 4 Servings

Ingredients

4 Small-Medium Zucchini

1/2-3/4 Teaspoon Seasoning Salt

1/2 Cup Reduced Fat, Shredded Cheddar Cheese (Sharp or Mild)

Olive Oil Spray
Preheat oven to 350 degrees. Prepare a baking sheet by spraying with olive oil spray and then set aside. Wash zucchini, cut off and discard ends. Slice zucchini into 1/4 inch rounds and lay on baking sheet. Sprinkle lightly with seasoning salt, turn over and then sprinkle the other side lightly as well. Place baking sheet on the center oven rack and bake for 10 minutes. Flip zucchini and bake an additional 10 minutes or until zucchini is tender. Remove from oven and sprinkle zucchini with the cheese and then return to oven. Bake for an additional five minutes or until cheese is melted. Serve and enjoy!

Notes: The amount of seasoning salt is really up to you. The measurements I gave are not exact, as no two zucchini are the exact same size. I recommend using the smallest amount necessary to season your zucchini as the flavor of the seasoning salt can be strong. Less is more for this recipe! I used a bit too much on the zucchini in the pictures…woops!
